Cheesy Broccoli Casserole

Instructions
- Preheat the oven to 350°F (177°C).
- Melt butter in a large pot or dutch oven over medium heat, then add minced garlic and sauté until fragrant.
- Add chicken broth and broccoli florets, stirring to combine.
- For stovetop, bring to a boil and simmer for 4-8 minutes until broccoli is bright green and tender. For Instant Pot, cook under high pressure for 1 minute and release immediately.
- Stir in cubed cream cheese and 2 cups of shredded cheddar cheese until smooth. Adjust salt and pepper to taste.
- Transfer the mixture to a casserole dish and sprinkle the remaining ½ cup of shredded cheese on top.
- Bake for about 5 minutes, until the cheese is melted.
