Ingredients

The vegetables

  • 4 cups broccoli florets, roughly chopped
  • 4 cups cauliflower florets, roughly chopped

The sauce

  • 1 tbsp cooking fat of your choice
  • ½ small onion, chopped
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 4 cups cauliflower florets, roughly chopped
  • cups bone broth
  • 1 cup whole milk
  • 1 tbsp Dijon mustard
  • ½ cup grated sharp cheddar cheese
  • ½ cup grated Parmesan cheese

The topping

  • ½ cup grated sharp cheddar cheese
  • ½ cup grated mozzarella cheese

Instructions

  1. Blanch the cauliflower florets for 2 minutes, then add the broccoli and cook for another 2 minutes.
  2. Drain the vegetables and cool them in cold water to stop the cooking process.
  3. Preheat the oven to 350°F.
  4. Melt the cooking fat in a saucepan, add onion, salt, and pepper; cook until fragrant.
  5. Add the remaining cauliflower florets and cook for 2 minutes, then add bone broth and bring to a boil.
  6. Cover and simmer until the cauliflower is very tender, about 8 to 10 minutes.
  7. Blend the cauliflower mixture with milk, Dijon mustard, cheddar, and Parmesan until smooth.
  8. Pour the sauce over the blanched vegetables and toss to coat.
  9. Transfer to a baking dish, top with mozzarella and remaining cheddar.
  10. Bake for 30-35 minutes until the cheese is golden and bubbly.
