Cheesy Broccoli Cauliflower Casserole

Instructions
- Blanch the cauliflower florets for 2 minutes, then add the broccoli and cook for another 2 minutes.
- Drain the vegetables and cool them in cold water to stop the cooking process.
- Preheat the oven to 350°F.
- Melt the cooking fat in a saucepan, add onion, salt, and pepper; cook until fragrant.
- Add the remaining cauliflower florets and cook for 2 minutes, then add bone broth and bring to a boil.
- Cover and simmer until the cauliflower is very tender, about 8 to 10 minutes.
- Blend the cauliflower mixture with milk, Dijon mustard, cheddar, and Parmesan until smooth.
- Pour the sauce over the blanched vegetables and toss to coat.
- Transfer to a baking dish, top with mozzarella and remaining cheddar.
- Bake for 30-35 minutes until the cheese is golden and bubbly.
