Cauliflower Casserole

Ingredients

  • 2 heads cauliflower, chopped into bite-sized florets
  • 8 ounces cream cheese, softened
  • 1 cup half and half or heavy cream
  • 1 ½ cups mozzarella cheese, shredded and divided
  • 1 cup cheddar cheese, shredded and divided
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 5 slices bacon, cooked and chopped

Instructions

  1. Preheat the oven to 190C/375F and grease a baking dish.
  2. Blanch the cauliflower florets in boiling salted water for about 3-4 minutes, then drain.
  3. In a mixing bowl, combine softened cream cheese, half-and-half cream, 1 cup of shredded mozzarella, ½ cup cheddar cheese, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Fold the blanched cauliflower and chopped bacon into the cheese mixture.
  5. Transfer the mixture to the baking dish and sprinkle the remaining mozzarella and cheddar cheese on top.
  6. Bake for about 25-30 minutes until bubbly and the cheese has melted.
  7. Let the casserole sit for a few minutes before serving.
