Cauliflower Casserole

Ingredients

  • 2 medium heads cauliflower
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon garlic powder
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground nutmeg
  • 6 slices bacon
  • 4 ounces reduced-fat cream cheese
  • ¼ cup nonfat plain Greek yogurt
  • cup freshly grated Gruyere cheese
  • ¼ cup finely grated Parmesan cheese
  • 3 tablespoons fresh chives

Instructions

  1. Preheat the oven to 425°F and prepare a casserole dish.
  2. Toss cauliflower florets with olive oil, garlic powder, salt, pepper, and nutmeg, then spread in the casserole dish.
  3. Roast the cauliflower for 30 minutes until tender.
  4. Bake bacon on a lined baking sheet until crisp, about 10 to 15 minutes.
  5. Chop or crumble the bacon once cooled.
  6. Mix cream cheese and Greek yogurt in a bowl, then stir in ⅓ cup Gruyere, 2 tablespoons Parmesan, and half of the bacon.
  7. Dollop the cream cheese mixture over the roasted cauliflower and top with remaining cheeses.
  8. Bake for an additional 5 to 7 minutes until cheese is melted.
  9. Broil for 1 to 3 minutes until golden, then garnish with chives and remaining bacon before serving.
