Cauliflower Casserole

Instructions
- Preheat the oven to 425°F and prepare a casserole dish.
- Toss cauliflower florets with olive oil, garlic powder, salt, pepper, and nutmeg, then spread in the casserole dish.
- Roast the cauliflower for 30 minutes until tender.
- Bake bacon on a lined baking sheet until crisp, about 10 to 15 minutes.
- Chop or crumble the bacon once cooled.
- Mix cream cheese and Greek yogurt in a bowl, then stir in ⅓ cup Gruyere, 2 tablespoons Parmesan, and half of the bacon.
- Dollop the cream cheese mixture over the roasted cauliflower and top with remaining cheeses.
- Bake for an additional 5 to 7 minutes until cheese is melted.
- Broil for 1 to 3 minutes until golden, then garnish with chives and remaining bacon before serving.
