Loaded Cauliflower Casserole

The casserole

Instructions
- Soak cashews in water for at least 2 hours or overnight.
- Drain and rinse the cashews, then blend with remaining topping ingredients until creamy.
- Prepare bacon and chicken by dicing and cutting them into small pieces.
- Heat a skillet and cook bacon until crispy, then set aside.
- Preheat the oven to 400°F and grease a baking dish.
- Spread cauliflower and mushrooms in the dish, then add chicken pieces and season with salt and pepper.
- Top with bacon and half of the chives, then spread the cashew topping evenly.
- Sprinkle remaining chives on top and bake for 30-40 minutes until chicken is cooked through.
