Loaded Cauliflower Casserole

Ingredients

The topping

  • 2 cups raw cashews
  • 4 cloves garlic
  • 1 tsp sea salt
  • ½ tsp ground pepper
  • ½ tsp smoked paprika
  • 2 tsp lemon juice
  • ½ cup water

The casserole

  • 8 pieces bacon, diced
  • 3 pieces boneless skinless chicken breasts, cut into small cubes
  • 1 head cauliflower, cut into florets
  • 8 oz mushrooms, halved
  • ½ cup chives, diced
  • 1 tbsp butter or ghee
  • to taste salt and pepper

Instructions

  1. Soak cashews in water for at least 2 hours or overnight.
  2. Drain and rinse the cashews, then blend with remaining topping ingredients until creamy.
  3. Prepare bacon and chicken by dicing and cutting them into small pieces.
  4. Heat a skillet and cook bacon until crispy, then set aside.
  5. Preheat the oven to 400°F and grease a baking dish.
  6. Spread cauliflower and mushrooms in the dish, then add chicken pieces and season with salt and pepper.
  7. Top with bacon and half of the chives, then spread the cashew topping evenly.
  8. Sprinkle remaining chives on top and bake for 30-40 minutes until chicken is cooked through.
