Hearty Chicken and Broccoli Casserole

Instructions
- 1. Preheat the oven to broil and grease a sheet pan with avocado oil.
- 2. Place the chicken on the pan, season with salt and pepper, and cook for 6 minutes.
- 3. Flip the chicken and cook for an additional 6 minutes or until cooked through.
- 4. Set the chicken aside and reduce the oven temperature to 400°F.
- 5. Prepare the bacon, cauliflower rice, broccoli, mushrooms, and garlic.
- 6. In a skillet, cook the diced bacon until crispy, then remove and place on a paper towel.
- 7. In the same skillet, add mushrooms and cook until softened, then add arrowroot flour and garlic.
- 8. Slowly add coconut milk while stirring to prevent clumps, then simmer the sauce.
- 9. In a greased baking dish, combine cauliflower rice, broccoli, chicken (chopped), bacon, and the creamy sauce.
- 10. Mix everything well and bake for 20-25 minutes, then let cool for 5 minutes before serving.
