Ingredients

The main ingredients

  • 2 lbs chicken thighs
  • 10 pieces bacon, diced
  • 3 cups cauliflower rice
  • 4 cups broccoli florets
  • 2 cups mushrooms, diced
  • ¼ cup arrowroot flour
  • 2 tbsp minced garlic
  • cups coconut milk
  • 1 tbsp butter, ghee or coconut oil

Seasoning

  • 1 tsp salt
  • 1 tsp pepper

Cooking oil

  • 1 tbsp avocado oil

Instructions

  1. 1. Preheat the oven to broil and grease a sheet pan with avocado oil.
  2. 2. Place the chicken on the pan, season with salt and pepper, and cook for 6 minutes.
  3. 3. Flip the chicken and cook for an additional 6 minutes or until cooked through.
  4. 4. Set the chicken aside and reduce the oven temperature to 400°F.
  5. 5. Prepare the bacon, cauliflower rice, broccoli, mushrooms, and garlic.
  6. 6. In a skillet, cook the diced bacon until crispy, then remove and place on a paper towel.
  7. 7. In the same skillet, add mushrooms and cook until softened, then add arrowroot flour and garlic.
  8. 8. Slowly add coconut milk while stirring to prevent clumps, then simmer the sauce.
  9. 9. In a greased baking dish, combine cauliflower rice, broccoli, chicken (chopped), bacon, and the creamy sauce.
  10. 10. Mix everything well and bake for 20-25 minutes, then let cool for 5 minutes before serving.
