Broccoli Cauliflower Casserole

Ingredients

The vegetables

  • 1 bunch Broccoli (2-3 heads, cut into florets)
  • 1 head Cauliflower (cut into florets)
  • ½ large Onion (diced)
  • 6 cloves Garlic (minced)

The sauce

  • 1 tbsp Unsalted butter (melted)
  • 8 oz Cream cheese (softened at room temperature)
  • ½ cup Chicken broth (reduced sodium)

The cheese

  • cups Cheddar cheese (shredded; divided into 1 cup and ½ cup)
  • cups Mozzarella cheese (shredded; divided into 1 cup and ½ cup)

Seasoning and optional ingredients

  • ½ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)
  • 9 slices Cooked bacon (crumbled or chopped; optional; divided)

Instructions

  1. Preheat the oven to 400°F (232°C).
  2. Boil water in a large pot or Dutch oven, add broccoli and cauliflower, and cook until crisp-tender, then drain and cool.
  3. Melt butter in the same pot, add onions, and cook until translucent.
  4. Add minced garlic and sauté until fragrant.
  5. Reduce heat, add cream cheese, and stir until melted, then add chicken broth.
  6. Combine the broccoli and cauliflower with the sauce, add cheeses and bacon, and mix well.
  7. Transfer to a casserole dish, top with remaining cheese and bacon.
  8. Bake for about 10 minutes until cheese is melted, broil for 2-3 minutes for browning if desired.
