Cauliflower Casserole

Instructions
- Preheat the oven to 450°F (232°C).
- Toss the cauliflower florets with melted butter, sea salt, and black pepper in a large bowl.
- Transfer the cauliflower to a casserole dish and roast until crisp-tender, about 25-30 minutes.
- In the same bowl, whisk together sour cream and heavy cream until smooth, then stir in minced garlic, half of the cheddar cheese, half of the bacon, and half of the green onions. Season to taste.
- Add the roasted cauliflower to the sauce and mix well.
- Return the mixture to the casserole dish, top with remaining cheese and bacon.
- Bake for 5-10 minutes until the cheese melts, then top with remaining green onions.
