Cheesy Broccoli Casserole

Ingredients

The base

  • 2 cans condensed cream of mushroom soup
  • 8 oz sharp cheddar cheese, grated
  • 1 tsp freshly ground black pepper
  • 1 tsp granulated garlic
  • ¼ tsp cayenne pepper
  • zest of 1 lemon

The vegetables

  • 2 large heads broccoli
  • 1 medium onion, chopped

The topping

  • 4 Tbsp unsalted butter
  • 2 sleeves coarsely crushed Ritz crackers

Seasoning

  • Kosher salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the mushroom soup, 1 cup of cheddar, lemon zest, black pepper, garlic, and cayenne.
  3. Prepare the broccoli by separating the stems from the crowns, slicing the stems, and cutting the crowns into florets.
  4. In a large ovenproof skillet, melt the butter and sauté the onion with salt until softened.
  5. Add the broccoli and a bit of water, cover, and steam until bright green.
  6. Combine the broccoli with the mushroom soup mixture and coat well.
  7. Top the mixture with crushed crackers and the remaining cheddar.
  8. Bake the casserole for 20-25 minutes until golden brown and bubbling.
