Instructions
- Preheat the oven to 350°F.
- In a medium bowl, whisk together the mushroom soup, 1 cup of cheddar, lemon zest, black pepper, garlic, and cayenne.
- Prepare the broccoli by separating the stems from the crowns, slicing the stems, and cutting the crowns into florets.
- In a large ovenproof skillet, melt the butter and sauté the onion with salt until softened.
- Add the broccoli and a bit of water, cover, and steam until bright green.
- Combine the broccoli with the mushroom soup mixture and coat well.
- Top the mixture with crushed crackers and the remaining cheddar.
- Bake the casserole for 20-25 minutes until golden brown and bubbling.
