BBQ Chicken Cauliflower Rice Casserole

Instructions
- 1. Preheat the oven to 400°F and grease an 8×8 baking sheet with nonstick spray.
- 2. Chop the chicken into very small bite-sized pieces and add to a large bowl.
- 3. Add the defrosted cauliflower rice to the bowl with the chicken.
- 4. In a sauté pan, heat the olive oil and cook the diced onion for 3 minutes, then add the minced garlic and cook for another 3 minutes.
- 5. Add the cooked onions and garlic to the bowl with the chicken and cauliflower.
- 6. Mix in the BBQ sauce, eggs, salt, pepper, and chili powder, stirring until well combined.
- 7. Pour the mixture into the greased baking dish and top with shredded cheddar cheese.
- 8. Bake for 45 minutes or until set, then let cool for 5 minutes before serving.
