BBQ Chicken Cauliflower Rice Casserole

Ingredients

  • 2 large chicken breasts, cooked
  • 1 8oz bag frozen cauliflower rice, defrosted
  • 2 tbsp olive oil
  • ½ yellow onion diced
  • 3 cloves garlic, minced
  • ¾ cup BBQ sauce
  • 2 eggs
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp chili powder
  • ¾ cup shredded cheddar cheese

Instructions

  1. 1. Preheat the oven to 400°F and grease an 8×8 baking sheet with nonstick spray.
  2. 2. Chop the chicken into very small bite-sized pieces and add to a large bowl.
  3. 3. Add the defrosted cauliflower rice to the bowl with the chicken.
  4. 4. In a sauté pan, heat the olive oil and cook the diced onion for 3 minutes, then add the minced garlic and cook for another 3 minutes.
  5. 5. Add the cooked onions and garlic to the bowl with the chicken and cauliflower.
  6. 6. Mix in the BBQ sauce, eggs, salt, pepper, and chili powder, stirring until well combined.
  7. 7. Pour the mixture into the greased baking dish and top with shredded cheddar cheese.
  8. 8. Bake for 45 minutes or until set, then let cool for 5 minutes before serving.
