Ingredients

The chicken

  • 3 pounds boneless, skinless chicken breasts
  • teaspoons fine sea salt
  • ½ teaspoon ground black pepper
  • 4 tablespoons salted butter, ghee, or coconut oil

The potatoes

  • 3 pounds russet or other white potatoes

The sauce

  • 1 cup BBQ sauce
  • 1 tablespoon apple cider vinegar
  • ¼ cup diced purple onions
  • ¼ cup chopped fresh cilantro leaves

Instructions

  1. Season the chicken with salt and pepper.
  2. Sear the chicken in melted butter until browned on both sides.
  3. Cook the chicken by either simmering in water on the stovetop or using a slow cooker.
  4. Prepare the potatoes by peeling and cubing them, then boiling until tender.
  5. Mash the cooked potatoes with remaining butter, salt, and pepper.
  6. Shred the cooked chicken and mix with half of the BBQ sauce.
  7. Layer the mashed potatoes and shredded chicken in a baking dish, topping with the remaining BBQ sauce mixed with vinegar.
  8. Bake until the top is browned, then garnish and serve.
