BBQ Chicken Potato Casserole

The potatoes

russet or other white potatoes
The sauce

BBQ sauce

apple cider vinegar

chopped fresh cilantro leaves
Instructions
- Season the chicken with salt and pepper.
- Sear the chicken in melted butter until browned on both sides.
- Cook the chicken by either simmering in water on the stovetop or using a slow cooker.
- Prepare the potatoes by peeling and cubing them, then boiling until tender.
- Mash the cooked potatoes with remaining butter, salt, and pepper.
- Shred the cooked chicken and mix with half of the BBQ sauce.
- Layer the mashed potatoes and shredded chicken in a baking dish, topping with the remaining BBQ sauce mixed with vinegar.
- Bake until the top is browned, then garnish and serve.
