Buffalo Chicken Sweet Potato Casserole

Ingredients

  • 2 lbs boneless chicken breasts
  • 5 medium sweet potatoes
  • 2 heads broccoli
  • 1 cup buffalo sauce
  • ½ cup avocado oil or olive oil
  • ½ tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onion
  • ½ cup cooked turkey bacon
  • to taste none ranch

Instructions

  1. Preheat the oven to 425°F and grease a 9×13 casserole dish.
  2. Cut the chicken, sweet potatoes, and broccoli into small pieces.
  3. In a small bowl, mix buffalo sauce, avocado oil, salt, pepper, and garlic.
  4. In a large bowl, combine sweet potatoes with half of the buffalo sauce mixture.
  5. Pour sweet potatoes into the casserole dish and roast for 30 minutes, flipping halfway through.
  6. In the bowl with sweet potatoes, add chicken and broccoli along with the remaining buffalo sauce, and toss to coat.
  7. After 30 minutes, add the chicken and broccoli on top of the sweet potatoes.
  8. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F.
  9. Remove from the oven, top with cheese, green onion, and cooked bacon, then return to the oven for 5 more minutes until the cheese melts.
  10. Let cool briefly before serving, adding any remaining toppings like ranch or blue cheese.
