Instructions
- Preheat the oven to 425°F and grease a 9×13 casserole dish.
- Cut the chicken, sweet potatoes, and broccoli into small pieces.
- In a small bowl, mix buffalo sauce, avocado oil, salt, pepper, and garlic.
- In a large bowl, combine sweet potatoes with half of the buffalo sauce mixture.
- Pour sweet potatoes into the casserole dish and roast for 30 minutes, flipping halfway through.
- In the bowl with sweet potatoes, add chicken and broccoli along with the remaining buffalo sauce, and toss to coat.
- After 30 minutes, add the chicken and broccoli on top of the sweet potatoes.
- Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F.
- Remove from the oven, top with cheese, green onion, and cooked bacon, then return to the oven for 5 more minutes until the cheese melts.
- Let cool briefly before serving, adding any remaining toppings like ranch or blue cheese.
