Instructions
- Prepare the marmalade dip by combining marmalade, mustard, and mayonnaise in a bowl and refrigerate.
- Preheat the oven to 450°F and prepare a baking sheet with parchment or foil and cooking spray.
- Cut the chicken into bite-sized strips.
- Whisk the egg in a bowl and set aside.
- In another bowl, mix the breadcrumbs, coconut, garlic powder, thyme, paprika, and salt.
- Dip each chicken strip in flour, then egg, and finally coat with the seasoned coconut mixture.
- Place the coated chicken on the baking sheet and bake for 20-25 minutes, turning halfway through.
- If frying, heat oil to 375°F and fry the chicken for 2-3 minutes on each side until golden brown.
