Ingredients

The chicken

  • 1 pound chicken breast
  • 1 large egg
  • ½ cup flour

Seasoned Coconut Mixture

  • ½ cup bread crumbs
  • cups dried grated coconut
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ¾ teaspoon salt

Pineapple Marmalade Dip (optional)

  • 1 cup pineapple marmalade
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise

Instructions

  1. Prepare the marmalade dip by combining marmalade, mustard, and mayonnaise in a bowl and refrigerate.
  2. Preheat the oven to 450°F and prepare a baking sheet with parchment or foil and cooking spray.
  3. Cut the chicken into bite-sized strips.
  4. Whisk the egg in a bowl and set aside.
  5. In another bowl, mix the breadcrumbs, coconut, garlic powder, thyme, paprika, and salt.
  6. Dip each chicken strip in flour, then egg, and finally coat with the seasoned coconut mixture.
  7. Place the coated chicken on the baking sheet and bake for 20-25 minutes, turning halfway through.
  8. If frying, heat oil to 375°F and fry the chicken for 2-3 minutes on each side until golden brown.
