Ingredients

The chicken strips

  • pounds boneless skinless chicken breasts
  • 3 large eggs
  • 2 cloves garlic, mashed
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt
  • cups finely grated parmesan cheese
  • ¼ cup gluten-free bread crumbs
  • ¼ cup gluten-free flour
  • ¼ cup avocado oil or coconut oil
  • 2 tablespoons butter or ghee

Garnishes

  • to taste chopped parsley
  • to taste flaky salt
  • to taste black pepper
  • to taste lemon wedges

Instructions

  1. Slice each chicken breast in half lengthwise, then cut into strips.
  2. In a small bowl, whisk together the eggs, mashed garlic, Italian seasoning, and salt.
  3. In a second small bowl, whisk together the parmesan cheese, bread crumbs, and flour.
  4. Dip each piece of chicken first into the egg mixture, then transfer to the parmesan mixture, ensuring each piece is well coated.
  5. Heat a large skillet over medium heat and add about 2 tablespoons of oil and 1 tablespoon of butter/ghee.
  6. Add chicken in batches to the skillet and cook for about 4 minutes on each side.
  7. Remove cooked chicken from the pan, add remaining oil and butter, and finish cooking all the chicken.
  8. Plate and serve, garnishing with chopped parsley and lemon wedges.
