Crispy Parmesan Chicken Strips

Instructions
- Slice each chicken breast in half lengthwise, then cut into strips.
- In a small bowl, whisk together the eggs, mashed garlic, Italian seasoning, and salt.
- In a second small bowl, whisk together the parmesan cheese, bread crumbs, and flour.
- Dip each piece of chicken first into the egg mixture, then transfer to the parmesan mixture, ensuring each piece is well coated.
- Heat a large skillet over medium heat and add about 2 tablespoons of oil and 1 tablespoon of butter/ghee.
- Add chicken in batches to the skillet and cook for about 4 minutes on each side.
- Remove cooked chicken from the pan, add remaining oil and butter, and finish cooking all the chicken.
- Plate and serve, garnishing with chopped parsley and lemon wedges.
