Ingredients

The chicken

  • 10 oz. boneless, skinless Chicken Breast
  • to taste Salt
  • to taste Black Pepper

The breading

  • cup All-Purpose Flour
  • 1 tsp. Italian Seasoning
  • 1 large Egg
  • cup Panko Bread Crumbs
  • cup grated Parmesan Cheese
  • ¼ cup Avocado Oil (or vegetable oil)

The toppings

  • 4 oz. fresh Mozzarella Cheese
  • cup Good Marinara Sauce
  • to taste chopped Parsley and/or Fresh Basil

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with a wire rack and paper towels.
  2. Cut the chicken breast in half and pound each half to ¼ inch thickness, seasoning with salt and pepper.
  3. Set up three shallow dishes for the breading: one with flour and seasoning, one with beaten egg, and one with panko and Parmesan.
  4. Coat each chicken piece in flour, then egg, and finally the breadcrumb mixture, ensuring even coverage.
  5. Heat oil in a pan and fry each chicken piece for 3-4 minutes per side until golden brown.
  6. Transfer the fried chicken to the baking sheet and sprinkle with salt.
  7. Top each piece with marinara sauce and mozzarella, then bake for 8-10 minutes until the cheese is bubbly.
  8. Garnish with fresh herbs and serve hot.
