Ingredients

The sauce

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon granulated sugar

The chicken

  • pounds boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko bread crumbs
  • ¼ cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, minced
  • 1 cup vegetable oil or avocado oil
  • 2 cups shredded mozzarella cheese
  • 8 ounces spaghetti, cooked
  • to taste salt and freshly ground black pepper
  • to garnish fresh basil or parsley

Instructions

  1. Heat olive oil in a saucepan and sauté minced garlic until fragrant.
  2. Add crushed tomatoes, basil, oregano, and sugar, then bring to a boil and simmer for 10-15 minutes.
  3. Prepare the chicken by slicing and pounding it to an even thickness, then season with salt and pepper.
  4. Set up a breading station with flour, beaten eggs, and a mixture of panko, Parmesan, and parsley.
  5. Dredge each cutlet in flour, dip in egg, and coat with the breadcrumb mixture.
  6. Heat vegetable oil in a skillet and fry the cutlets until golden brown and cooked through.
  7. Transfer fried cutlets to a wire rack, top with sauce and mozzarella, and broil until cheese is melted.
  8. Serve the chicken Parmesan with additional sauce and cooked spaghetti, garnished with parsley.
