Instructions
- Heat olive oil in a saucepan and sauté minced garlic until fragrant.
- Add crushed tomatoes, basil, oregano, and sugar, then bring to a boil and simmer for 10-15 minutes.
- Prepare the chicken by slicing and pounding it to an even thickness, then season with salt and pepper.
- Set up a breading station with flour, beaten eggs, and a mixture of panko, Parmesan, and parsley.
- Dredge each cutlet in flour, dip in egg, and coat with the breadcrumb mixture.
- Heat vegetable oil in a skillet and fry the cutlets until golden brown and cooked through.
- Transfer fried cutlets to a wire rack, top with sauce and mozzarella, and broil until cheese is melted.
- Serve the chicken Parmesan with additional sauce and cooked spaghetti, garnished with parsley.
