Instructions
- Heat olive oil in a saucepan, sauté onions for 2 minutes, then add garlic and sauté for an additional 30 seconds.
- Stir in crushed tomatoes, salt, oregano, and basil, then simmer for 20 minutes.
- Prepare chicken by sprinkling with salt and letting it rest for 10 minutes.
- Whisk together flour and egg in a shallow dish, and mix Parmesan, Panko, garlic powder, and oregano in another dish.
- Dredge chicken in the egg mixture, then coat in the Panko mixture.
- Heat olive oil in a skillet and fry chicken cutlets for 2-3 minutes on each side until golden brown.
- Transfer chicken to a baking sheet, top with mozzarella and provolone, then broil until melted.
- Serve immediately topped with marinara sauce and fresh basil.
