Ingredients

Breadcrumbs

  • 2 tablespoon melted butter
  • ¾ cup panko breadcrumbs
  • 1 teaspoon granulated onion
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ¼ teaspoon grated lemon

Chicken

  • 2 pieces chicken breasts, sliced in half
  • 1-2 pieces eggs
  • as needed unit olive oil
  • to taste unit Italian seasoning, salt and pepper

Toppings

  • 1 cup pasta sauce
  • ¼ cup Parmesan, grated
  • ½-1 cup shredded mozzarella
  • to taste unit basil
  • 1 piece lemon, quartered

Instructions

  1. Heat melted butter in a skillet over medium heat and add panko breadcrumbs, granulated onion, Italian seasoning, garlic powder, and grated lemon, mixing until browned.
  2. Preheat the oven to 400°F and grease a baking tray.
  3. Slice the chicken breasts and season with Italian seasoning, salt, and pepper.
  4. Whisk the eggs in a shallow plate, dip the chicken in the egg, and coat with the breadcrumb mixture.
  5. Fry the chicken in oil until golden and crispy, about 4-5 minutes per side.
  6. Place the chicken on the baking tray, top with pasta sauce, Parmesan, mozzarella, and basil.
  7. Bake for 15-20 minutes until the cheese is melted and bubbly.
