Baked Chicken Parmesan

Instructions
- Preheat the oven to 425°F.
- Season the chicken breasts with salt and pepper.
- Melt the butter in a medium bowl.
- In a large shallow bowl, mix the Italian breadcrumbs, panko breadcrumbs, and parmesan cheese.
- Dip each chicken breast in the melted butter, then coat with the breadcrumb mixture.
- Place the coated chicken breasts on a sheet pan sprayed with cooking spray.
- Spray the tops of the chicken with cooking spray and drizzle any remaining butter over them.
- Bake for 25-30 minutes until golden brown.
- Remove from the oven and top each breast with marinara sauce and a slice of mozzarella cheese.
- Broil for 1-2 minutes until the cheese is melted and browned.
- Garnish with basil or parsley and serve.
