Instructions
- 1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.
- 2. Pound the chicken to ½ inch thickness.
- 3. In one bowl, whisk the eggs, and in another bowl, combine the cracker crumbs with parmesan, salt, pepper, and Italian seasoning.
- 4. Coat each chicken piece in egg, then dip into the cracker mixture, ensuring both sides are well coated.
- 5. Lay the coated chicken on the baking sheet and repeat with the remaining pieces.
- 6. Bake the chicken for 15 minutes, then remove from the oven.
- 7. Top each piece with about ⅓ cup of marinara and a slice of mozzarella cheese.
- 8. Bake for an additional 5 minutes, then broil for 3-4 minutes until the cheese is bubbly and golden.
- 9. Remove from the oven and serve over pasta.
