Ingredients

The Chicken

  • 3 large chicken breasts
  • 2 large eggs

The Coating

  • 1 cup finely crushed cracker crumbs or breadcrumbs
  • ½ cup grated parmesan cheese
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp Italian seasoning

The Sauce and Cheese

  • 2 cups marinara sauce
  • 8 oz mozzarella log

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.
  2. 2. Pound the chicken to ½ inch thickness.
  3. 3. In one bowl, whisk the eggs, and in another bowl, combine the cracker crumbs with parmesan, salt, pepper, and Italian seasoning.
  4. 4. Coat each chicken piece in egg, then dip into the cracker mixture, ensuring both sides are well coated.
  5. 5. Lay the coated chicken on the baking sheet and repeat with the remaining pieces.
  6. 6. Bake the chicken for 15 minutes, then remove from the oven.
  7. 7. Top each piece with about ⅓ cup of marinara and a slice of mozzarella cheese.
  8. 8. Bake for an additional 5 minutes, then broil for 3-4 minutes until the cheese is bubbly and golden.
  9. 9. Remove from the oven and serve over pasta.
