Clean Eating Baked Chicken Parmigiana

Instructions
- Preheat the oven to 425°F.
- Place the beaten egg in a shallow bowl.
- In another shallow bowl, combine breadcrumbs and Parmesan cheese.
- Season the chicken breasts with salt and pepper, then dip each into the egg mixture followed by the breadcrumbs.
- Place the coated chicken on a lightly greased baking sheet and bake for 8 minutes on each side.
- Remove from the oven and top each breast with about 2 tablespoons of tomato sauce and a half ounce of mozzarella cheese.
- Return to the oven for 2 minutes or until the cheese has melted.
- Serve with whole-wheat spaghetti or spaghetti squash.
