Clean Eating Baked Chicken Parmigiana

Ingredients

The chicken

  • 1 lb thinly sliced boneless skinless chicken breasts
  • 1 large egg

The coating

  • ½ cup Italian breadcrumbs
  • 1 tbsp garlic powder
  • 2 tbsp grated Parmesan cheese

The toppings

  • 2 oz fresh part skim mozzarella cheese
  • ½ cup tomato sauce

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Place the beaten egg in a shallow bowl.
  3. In another shallow bowl, combine breadcrumbs and Parmesan cheese.
  4. Season the chicken breasts with salt and pepper, then dip each into the egg mixture followed by the breadcrumbs.
  5. Place the coated chicken on a lightly greased baking sheet and bake for 8 minutes on each side.
  6. Remove from the oven and top each breast with about 2 tablespoons of tomato sauce and a half ounce of mozzarella cheese.
  7. Return to the oven for 2 minutes or until the cheese has melted.
  8. Serve with whole-wheat spaghetti or spaghetti squash.
