Easy Baked Chicken Parmesan

Ingredients

The chicken

  • 1 8-ounce boneless skinless chicken breast
  • cup milk
  • cup panko
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

The pasta

  • 4 ounces fettuccine noodles

The sauce and cheese

  • cups your favorite red sauce
  • ½ cup shredded mozzarella
  • ¼ cup shredded Parmesan

Instructions

  1. Preheat the oven to 425°F and prepare a baking tray with foil and grease it.
  2. Boil a medium pot of lightly salted water for the pasta.
  3. Prepare two dishes: one with milk and the other with panko mixed with salt and pepper.
  4. Butterfly the chicken breast and cut it in half to create two thin pieces.
  5. Coat each chicken piece in milk and then in panko, placing them on the baking sheet.
  6. Bake the chicken for 10 minutes until it reaches 150°F.
  7. While the chicken is baking, heat the red sauce and cook the fettuccine according to package instructions.
  8. Once the chicken reaches 150°F, add sauce and top with mozzarella and Parmesan.
  9. Return the chicken to the oven and bake until the cheese is melted and the chicken reaches 160°F, about 5 minutes.
  10. Let the chicken rest for 5 minutes, then serve over the noodles with remaining sauce.
