Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Pound the chicken breasts to an even thickness of about ½ inch.
- Combine the seasoned breadcrumbs, panko breadcrumbs, Parmesan cheese, Italian seasoning, parsley, salt, pepper, and garlic powder in a shallow dish.
- Prepare the beaten egg in a separate shallow dish.
- Dip each chicken breast in the egg, letting excess drip off, then coat in the breadcrumb mixture, pressing lightly.
- Heat olive oil in a skillet over medium-high heat and cook the chicken for 4-5 minutes until golden, then flip and cook for another 3 minutes.
- Transfer the chicken to the baking sheet, top with pasta sauce and Mozzarella cheese, and sprinkle with additional Italian seasoning if desired.
- Bake in the preheated oven for 15-20 minutes until fully cooked.
