Ingredients

The sauce

  • 28 oz fire-roasted crushed tomato sauce
  • ½ tsp minced garlic
  • 2 tbsp fresh basil, chopped
  • ¾ cup parmesan grated cheese
  • ½ tsp crushed red pepper
  • tsp black pepper
  • ½ tsp sea salt

The chicken

  • 1 lb boneless chicken breast
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground thyme
  • 2 eggs eggs
  • 1 cup Italian breadcrumbs
  • 1 cup all-purpose flour
  • 4 slices provolone cheese

Instructions

  1. Combine tomato sauce, minced garlic, 1 tbsp chopped basil, ¼ cup parmesan cheese, crushed red pepper, black pepper, and sea salt in a pot and cook for 5 minutes.
  2. Heat a skillet and tenderize the chicken breasts, then season with paprika, black pepper, garlic powder, ground thyme, and sea salt.
  3. Scramble the eggs in a bowl.
  4. Mix breadcrumbs and ½ cup parmesan cheese in a ziplock bag.
  5. Coat the chicken with flour, then dip in eggs, and finally coat with the breadcrumb mixture.
  6. Cook the chicken for 3 to 4 minutes on each side, then place on a baking pan.
  7. Top each chicken breast with tomato sauce, provolone cheese, and the remaining chopped basil, then broil until the cheese melts.
