Parmesan Chicken Fingers with Garlic Cheese Sauce

Ingredients

The chicken fingers

  • 4 pieces skinless, boneless chicken breasts
  • 1 cup flour
  • 2 pieces beaten eggs
  • 2 cups breadcrumbs (panko recommended)
  • ½ cup grated Parmesan cheese
  • Oil for frying
  • parsley for garnish

The garlic cheese sauce

  • 2 ounces light cream cheese
  • a splash of milk
  • 1 teaspoon minced fresh garlic or garlic salt
  • 1 teaspoon oil
  • 1 ounce good quality shredded cheese of choice (sharp white cheddar recommended)

Instructions

  1. Cut the chicken into strips.
  2. Pulse the breadcrumbs and Parmesan in a blender or food processor until fine.
  3. Set up three shallow bowls with flour, beaten eggs, and the crumb mixture.
  4. Coat each chicken strip in flour, dip in egg, and roll in the crumb mixture.
  5. Heat oil in a large skillet until it sizzles with a drop of water.
  6. Fry the chicken strips in batches for 1-3 minutes until golden brown and cooked through.
  7. Remove the chicken from the oil and drain on paper towels.
  8. For the cheese sauce, melt cream cheese in the microwave, then whisk in milk, garlic, and oil until smooth.
  9. Add shredded cheese to the sauce and heat until melted, adjusting consistency with more milk if needed.
