Ingredients

The crust

  • 1 pie crust thawed (homemade or store-bought)

The filling

  • 4 slices bacon
  • 1 medium onion, chopped
  • 4 large eggs
  • ¾ cup milk
  • ¾ cup heavy cream
  • 1 teaspoon fresh thyme, minced
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 4 ounces shredded Swiss cheese

Instructions

  1. Preheat the oven to 400°F and prick the bottom of the crust with a fork, then partially bake for 15 minutes.
  2. Fry the bacon in a skillet until crisp, about 8 minutes, then drain and chop, reserving the fat.
  3. In the same skillet, cook the onion until softened, about 5 minutes, then combine with the bacon.
  4. Whisk together the eggs, milk, cream, thyme, pepper, and salt in a large bowl.
  5. Reduce the oven temperature to 350°F and place the pie crust on a baking sheet.
  6. Sprinkle the cheese and bacon-onion mixture evenly in the crust.
  7. Pour the egg mixture into the crust until it is ½ inch from the top.
  8. Bake for 40 to 50 minutes until lightly browned and set, then cool for 5 minutes before serving.
