Quiche Lorraine

Instructions
- Preheat the oven to 400°F and prick the bottom of the crust with a fork, then partially bake for 15 minutes.
- Fry the bacon in a skillet until crisp, about 8 minutes, then drain and chop, reserving the fat.
- In the same skillet, cook the onion until softened, about 5 minutes, then combine with the bacon.
- Whisk together the eggs, milk, cream, thyme, pepper, and salt in a large bowl.
- Reduce the oven temperature to 350°F and place the pie crust on a baking sheet.
- Sprinkle the cheese and bacon-onion mixture evenly in the crust.
- Pour the egg mixture into the crust until it is ½ inch from the top.
- Bake for 40 to 50 minutes until lightly browned and set, then cool for 5 minutes before serving.
