Ingredients

Carnitas and Toppings

  • 1 recipe pork carnitas
  • 1 recipe french fries
  • 1 recipe sweet potato rounds
  • 1 recipe corn salsa
  • 1 can black beans
  • to taste jalapeños or pickled jalapeños
  • 1 recipe pineapple pico de gallo
  • 1 batch guacamole
  • to taste sesame tomatillo salsa or salsa verde
  • to taste warm corn or flour tortillas
  • 1 recipe cilantro lime rice
  • to taste shredded cheddar and pepper jack cheese
  • to taste fresh cilantro and green onions

French Fries

  • 4 inch russet potatoes
  • 2 tablespoons olive oil
  • 1 ½ teaspoons seasoned salt
  • 1 teaspoon pepper

Sweet Potato Rounds

  • 2 sweet potatoes cut into thin rounds
  • 2 tablespoons olive oil
  • to taste salt and pepper

Corn Salsa

  • 3 ears fresh corn
  • 2 poblano peppers
  • 1 jalapeno pepper
  • 2 limes juice
  • cup fresh cilantro, chopped
  • to taste kosher salt

Instructions

  1. Preheat the oven to 425°F for the french fries.
  2. Slice the russet potatoes, drizzle with olive oil, seasoned salt, and pepper, then bake for 20 minutes, toss, and bake for an additional 15-20 minutes.
  3. For sweet potato rounds, also preheat the oven to 425°F, slice the sweet potatoes, drizzle with olive oil, salt, and pepper, bake for 15-20 minutes, flip, and bake for another 15-20 minutes.
  4. To make the corn salsa, preheat the broiler to high, place corn and peppers on a baking sheet, broil until lightly charred, cool, then dice and mix with lime juice, cilantro, and salt.
