Instructions
- Preheat the oven to 425°F for the french fries.
- Slice the russet potatoes, drizzle with olive oil, seasoned salt, and pepper, then bake for 20 minutes, toss, and bake for an additional 15-20 minutes.
- For sweet potato rounds, also preheat the oven to 425°F, slice the sweet potatoes, drizzle with olive oil, salt, and pepper, bake for 15-20 minutes, flip, and bake for another 15-20 minutes.
- To make the corn salsa, preheat the broiler to high, place corn and peppers on a baking sheet, broil until lightly charred, cool, then dice and mix with lime juice, cilantro, and salt.
