Pork Carnitas

Instructions
- 1. Preheat the oven to 300°F and adjust the oven rack to the lower middle position.
- 2. Heat oil in a large pot over medium heat and brown the meat in batches, seasoning with salt and pepper.
- 3. Once browned, transfer the meat to a plate.
- 4. Combine the browned meat with onion, bay leaves, cumin, oregano, orange juice, orange rinds, chicken stock, and lime juice in the pot.
- 5. Bring the mixture to a simmer over medium-high heat, then cover and transfer to the oven.
- 6. Cook for about 3 hours until the meat is tender and falls apart easily.
- 7. Transfer the meat to a dish and degrease the braising liquid.
- 8. Pour the liquid over the meat and cover it with foil, then chill overnight in the fridge.
- 9. The next day, preheat the oven to 350°F and bake the meat uncovered for 30 minutes.
- 10. Switch the oven to broil and broil the meat for 6-8 minutes until browned and crispy.
- 11. Taste and adjust seasoning before serving.
