Pork Carnitas

Ingredients

The meat

  • 4 pounds boneless pork butt or boneless country ribs

The seasonings

  • 2 teaspoons canola oil or other vegetable oil
  • 1 ½ teaspoons salt
  • ¾ teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano

The aromatics

  • 1 large onion, peeled and quartered
  • 2 leaves bay leaves

The liquids

  • 2 cups chicken stock
  • 2 tablespoons fresh lime juice

The fruit

  • 1 medium orange, quartered and juiced (keep the rinds)

Instructions

  1. 1. Preheat the oven to 300°F and adjust the oven rack to the lower middle position.
  2. 2. Heat oil in a large pot over medium heat and brown the meat in batches, seasoning with salt and pepper.
  3. 3. Once browned, transfer the meat to a plate.
  4. 4. Combine the browned meat with onion, bay leaves, cumin, oregano, orange juice, orange rinds, chicken stock, and lime juice in the pot.
  5. 5. Bring the mixture to a simmer over medium-high heat, then cover and transfer to the oven.
  6. 6. Cook for about 3 hours until the meat is tender and falls apart easily.
  7. 7. Transfer the meat to a dish and degrease the braising liquid.
  8. 8. Pour the liquid over the meat and cover it with foil, then chill overnight in the fridge.
  9. 9. The next day, preheat the oven to 350°F and bake the meat uncovered for 30 minutes.
  10. 10. Switch the oven to broil and broil the meat for 6-8 minutes until browned and crispy.
  11. 11. Taste and adjust seasoning before serving.
