Slow Cooker Carnitas Tacos

Ingredients

The meat

  • 4 pound boneless pork butt or boneless country ribs
  • 2 teaspoons vegetable oil
  • 1 ½ teaspoons salt
  • ¾ teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 onion peeled and quartered
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh lime juice
  • 1 ½ cups chicken broth
  • cup orange juice

The tacos

  • 16 corn tortillas
  • ½ cup cilantro, chopped
  • cup red onion, finely diced

Instructions

  1. Heat oil in a large pot over medium heat and brown the seasoned meat in batches.
  2. Transfer the browned meat to a plate.
  3. Place the meat in a slow cooker with cumin, onion, bay leaves, oregano, lime juice, chicken broth, and orange juice.
  4. Cover and cook on HIGH for 4 hours or LOW for 8 hours.
  5. Remove the meat from the slow cooker and place it on a sheet pan.
  6. Broil the meat for 5-7 minutes until golden brown and crispy.
  7. Shred the meat and divide it among the tortillas.
  8. Top with cilantro and red onion, then serve.
