Ingredients

The Carnitas

  • 3 lbs boneless pork shoulder or butt roast
  • 4 cloves garlic, minced
  • 1 medium yellow onion, thinly sliced
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • teaspoon ground cinnamon
  • teaspoon chipotle powder
  • 2 teaspoons fine salt
  • ½ teaspoon black pepper
  • 2 juices limes
  • 1 large orange

The Cilantro-Lime Sauce

  • ¾ cup mayonnaise
  • 2 cloves garlic
  • 1 cup fresh cilantro leaves
  • ½ teaspoon fine salt
  • 1 lime juice

Instructions

  1. Pat the pork dry and prepare the spice rub by mixing chili powder, cumin, oregano, cinnamon, chipotle powder, salt, and pepper.
  2. Rub the spice mixture onto the pork and place it in the slow cooker with the onions and garlic on top.
  3. Pour lime and orange juice over the pork and cover the slow cooker.
  4. Set the slow cooker to LOW and cook for 8-9 hours until the pork shreds easily.
  5. Once cooked, shred the pork and moisten with cooking liquid as needed.
  6. For crispy carnitas, broil the shredded pork for a few minutes or sauté in a hot skillet.
  7. To make the cilantro-lime sauce, blend all sauce ingredients until combined.
  8. Serve the carnitas with desired toppings.
