Pork Carnitas Tacos

Ingredients

The pork

  • 2 lbs pork shoulder (or Boston butt roast)
  • 3 teaspoons oregano
  • 2 teaspoons pepper
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • 1 onion cut into chunks
  • 3 cloves garlic (whole)

The toppings

  • 1 recipe tomatillo salsa
  • recipes corn tortillas
  • 2 avocados sliced
  • to taste cilantro

Instructions

  1. Mix oregano, pepper, salt, and cumin and rub on the pork pieces in the slow cooker.
  2. Place onion and garlic on top of the pork.
  3. Slow cook on low for 6 to 8 hours until the meat is falling apart.
  4. Discard the onion and garlic after cooking.
  5. Drain the meat and shred it with a fork.
  6. Serve warm with tortillas, tomatillo salsa, avocados, and cilantro.
