Pork Carnitas Tacos

Ingredients

The Pork

  • 2 - 2.5 lb. top loin pork loin
  • ½ tsp. salt
  • ½ tsp. pepper

The Seasoning

  • 1 Tbsp. cumin
  • 1 Tbsp. oregano
  • 1 Tbsp. paprika
  • 2 Tbsp. olive oil
  • 3 cloves garlic
  • 2 Tbsp. jalapeño
  • 1 cup white onion

The Liquid

  • 1 medium orange
  • cup orange juice
  • cup beer

Instructions

  1. Rinse and dry the pork loin, then season with salt and pepper.
  2. Mix cumin, paprika, and oregano; sprinkle half on one side of the pork loin.
  3. Drizzle olive oil on the seasoned side of the pork and pat it down.
  4. Flip the pork and repeat the seasoning and oil process on the other side.
  5. Place the pork in the slow cooker and set to low.
  6. Add minced garlic, jalapeño, and onion on top of the pork.
  7. Squeeze fresh orange juice over the pork and veggies, or pour the juice directly.
  8. Optionally, pour beer over the top.
  9. Cover and cook for 8½ to 9 hours until tender.
  10. Shred the pork in the slow cooker and mix with juices.
  11. Serve on warm tortillas with desired toppings.
