Slow Cooker Carnitas

Ingredients

The meat

  • 3½ - 5 lbs pork shoulder

The seasoning

  • 4 cloves garlic, minced
  • 1 leaf bay leaf
  • ½ - 1 tsp chili pepper
  • 1 cup orange juice
  • tsp salt
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp crushed dried oregano leaves
  • 1 stick cinnamon stick

The vegetables

  • 1 large onion, chopped

For serving

  • tortillas corn tortillas
  • to taste chopped cilantro

Instructions

  1. Rinse the pork under cold water and remove skin and visible fat.
  2. Add half of the minced garlic, bay leaf, chili, and orange juice to the slow cooker.
  3. Season the pork with salt, cumin, smoked paprika, and oregano, then place it in the slow cooker.
  4. Add the remaining crushed oregano leaves, cinnamon stick, and onions to the slow cooker.
  5. Cover and cook on low for about 8 hours until the pork shreds easily with a fork.
  6. Remove the pork from the slow cooker and shred it, reserving the cooking liquid.
  7. Place the shredded pork on a foil-lined baking sheet, moisten with reserved liquid, and broil on high for 10-15 minutes until edges are crispy.
  8. Serve warm as a filling for tacos, burritos, or in bowls.
