Slow Cooker Carnitas

Ingredients

Carnitas Rub

  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 1 tablespoon avocado oil or olive oil

Carnitas

  • 2 pounds pork tenderloin or boneless pork loin
  • ½ onion chopped (approximately 1 cup)
  • 3 cloves garlic (minced)
  • 1 medium jalapeño (chopped)
  • 2 teaspoons salt
  • 2 tablespoons fresh lime juice (juice from 1 lime)
  • 4-5 tablespoons fresh navel orange juice (juice from 1 orange)
  • as needed tablespoon avocado oil (for searing)

Instructions

  1. Combine oregano, cumin, and avocado oil in a small bowl and mix well.
  2. Pat the pork dry and coat it with the spice rub, massaging it into the meat.
  3. Place the seasoned pork in the slow cooker and add onion, garlic, jalapeño, salt, lime juice, and orange juice.
  4. Cover and cook on HIGH for 4 to 6 hours or LOW for 6 to 8 hours until the pork reaches an internal temperature of 145°F.
  5. Shred the pork in the slow cooker using two forks or remove it and shred on a cutting board.
  6. To serve, heat a skillet with avocado oil, add shredded pork, and ladle some cooking juices over it.
  7. Cook until the bottom is browned and crispy, then flip and brown the other side.
  8. Serve the carnitas immediately.
