Slow Cooker Carnitas

fresh lime juice (juice from 1 lime)

fresh navel orange juice (juice from 1 orange)

avocado oil (for searing)
Instructions
- Combine oregano, cumin, and avocado oil in a small bowl and mix well.
- Pat the pork dry and coat it with the spice rub, massaging it into the meat.
- Place the seasoned pork in the slow cooker and add onion, garlic, jalapeño, salt, lime juice, and orange juice.
- Cover and cook on HIGH for 4 to 6 hours or LOW for 6 to 8 hours until the pork reaches an internal temperature of 145°F.
- Shred the pork in the slow cooker using two forks or remove it and shred on a cutting board.
- To serve, heat a skillet with avocado oil, add shredded pork, and ladle some cooking juices over it.
- Cook until the bottom is browned and crispy, then flip and brown the other side.
- Serve the carnitas immediately.
