Instructions
- Mix olive oil, salt, pepper, cumin, chili powder, paprika, oregano, coriander, and cayenne in a bowl.
- Toss pork chunks in the spice mixture until well coated.
- Sauté the pork in the Instant Pot until browned, then set aside.
- Sauté onion, bay leaf, and cinnamon stick until onions are tender.
- Add garlic and cook briefly.
- Stir in orange juice and return the pork to the pot.
- Seal the pot and set to pressure cook for 30 minutes.
- Let the pressure release naturally for 15 minutes, then release any remaining pressure.
- Skim off excess fat and stir the meat before serving.
