Ingredients

The meat and seasoning

  • 2 Tbsps Olive Oil
  • 1 tsp Salt
  • ¼ tsp Pepper
  • 1 Tbsp Cumin
  • 2 tsp Chili Powder
  • 1 tsp Paprika
  • 1 tsp Mexican Oregano
  • 1 tsp Coriander Powder
  • tsp Cayenne Powder
  • 1 to 1 ½ lbs Pork Shoulder / Pork Butt

The aromatics

  • ½ small Onion, chopped
  • 1 piece Bay Leaf
  • ½ stick Cinnamon Stick
  • 4 cloves Garlic, pressed or minced

The liquid

  • ½ cup Orange Juice

Instructions

  1. Mix olive oil, salt, pepper, cumin, chili powder, paprika, oregano, coriander, and cayenne in a bowl.
  2. Toss pork chunks in the spice mixture until well coated.
  3. Sauté the pork in the Instant Pot until browned, then set aside.
  4. Sauté onion, bay leaf, and cinnamon stick until onions are tender.
  5. Add garlic and cook briefly.
  6. Stir in orange juice and return the pork to the pot.
  7. Seal the pot and set to pressure cook for 30 minutes.
  8. Let the pressure release naturally for 15 minutes, then release any remaining pressure.
  9. Skim off excess fat and stir the meat before serving.
