Instructions
- Trim the fat off the pork shoulder and cut it into 2-inch cubes.
- In a large mixing bowl, combine the pork with salt, pepper, cumin, paprika, and oregano, tossing to coat.
- Using the sauté function on the Instant Pot, heat olive oil and sear the pork pieces for 2 minutes on each side, possibly in batches.
- Add garlic, broth, lime juice, and orange juice to the pot and secure the lid.
- Pressure cook on high for 35 minutes, then allow a natural release for 10 minutes before venting any remaining pressure.
- Preheat the oven broiler to high, remove the lid, and shred the meat with two forks.
- Transfer the shredded meat and ½ cup of cooking liquid to a baking pan and broil for 5 minutes until crispy.
- Garnish with fresh cilantro and serve.
