Ingredients

The meat

  • 4 pounds boneless pork butt

The seasoning

  • ½ tsp black pepper
  • 1 tsp salt
  • 2 tbsp cumin
  • 1 tsp paprika
  • ½ tsp oregano

The cooking ingredients

  • 2 tbsp olive oil
  • 4 cloves garlic
  • 1 cup broth (beef or chicken)
  • ¼ cup lime juice
  • ¼ cup orange juice

The garnish

  • to taste cilantro

Instructions

  1. Trim the fat off the pork shoulder and cut it into 2-inch cubes.
  2. In a large mixing bowl, combine the pork with salt, pepper, cumin, paprika, and oregano, tossing to coat.
  3. Using the sauté function on the Instant Pot, heat olive oil and sear the pork pieces for 2 minutes on each side, possibly in batches.
  4. Add garlic, broth, lime juice, and orange juice to the pot and secure the lid.
  5. Pressure cook on high for 35 minutes, then allow a natural release for 10 minutes before venting any remaining pressure.
  6. Preheat the oven broiler to high, remove the lid, and shred the meat with two forks.
  7. Transfer the shredded meat and ½ cup of cooking liquid to a baking pan and broil for 5 minutes until crispy.
  8. Garnish with fresh cilantro and serve.
