Ingredients

The main ingredients

  • 2 Tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Oregano
  • 1 Tablespoon Cumin
  • 2 teaspoons Chili Powder
  • 2 teaspoons Paprika
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Adobo Powder
  • 1 teaspoon Ground Coriander
  • 3 lbs Pork Shoulder, cut into large chunks
  • 1 Onion diced
  • 1 cup Orange Juice
  • 1 stick Cinnamon Stick

Optional ingredients

  • ¼ teaspoon Cayenne Powder
  • 1 Jalapeño Pepper chopped

Instructions

  1. Mix olive oil and spices in a bowl.
  2. Coat the pork chunks with the oil and spice mixture.
  3. Dice the onion into ½ inch pieces.
  4. Pour orange juice into the Instant Pot.
  5. Add the cinnamon stick.
  6. Combine the pork chunks and diced onion in the pot.
  7. Seal the lid and set the knob to Sealing.
  8. Pressure cook on High for 35 minutes.
  9. Allow natural pressure release for 15 minutes, then manually release the remaining pressure.
  10. Shred the meat using two forks, leaving some larger pieces.
  11. Strain the liquid, saving the onions and discarding the cinnamon stick.
  12. Mix the pork and onions with some of the degreased liquid.
