Instant Pot Carnitas

Instructions
- Mix all rub ingredients together and rub onto pork tenderloin.
- If time allows, let the pork sit for up to two hours to marinate.
- Turn the Instant Pot on Sauté mode and add oil to coat the bottom.
- Add the rubbed pork and cook until browned on all sides.
- Add cooking juice ingredients to the pot over the pork.
- Secure the lid and cook on Manual at high pressure for 15 minutes.
- Quick release the pressure, remove the pork, and shred it.
- Preheat the broiler.
- Place the carnitas on a parchment-lined baking sheet and ladle some cooking juice over them.
- Broil for 5 minutes, watching to prevent burning, then serve.
