Instant Pot Carnitas

Ingredients

The meat

  • 2 pounds boneless pork tenderloin

The rub

  • 1 ½ tablespoon olive oil or avocado oil
  • 1 ½ teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground chipotle chile pepper
  • ½ teaspoon black pepper

The cooking juice

  • 1 whole onion
  • 4 cloves garlic
  • 2 teaspoons dried oregano
  • 1 stick cinnamon
  • 1 cup fresh orange juice
  • cup fresh lime juice

Instructions

  1. Mix all rub ingredients together and rub onto pork tenderloin.
  2. If time allows, let the pork sit for up to two hours to marinate.
  3. Turn the Instant Pot on Sauté mode and add oil to coat the bottom.
  4. Add the rubbed pork and cook until browned on all sides.
  5. Add cooking juice ingredients to the pot over the pork.
  6. Secure the lid and cook on Manual at high pressure for 15 minutes.
  7. Quick release the pressure, remove the pork, and shred it.
  8. Preheat the broiler.
  9. Place the carnitas on a parchment-lined baking sheet and ladle some cooking juice over them.
  10. Broil for 5 minutes, watching to prevent burning, then serve.
