Ingredients

Topping

  • 5 tablespoons unsalted butter
  • ½ cup sugar
  • ½ cup flour
  • ½ cup oats

Batter

  • 6 tablespoons unsalted butter
  • 1 cup sugar
  • 1 tablespoon lemon zest
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup Greek yogurt
  • 3 cups peaches

Lemon Syrup

  • cup sugar
  • ½ cup lemon juice

Instructions

  1. Preheat the oven to 350°F and butter a 9-inch square cake pan.
  2. For the topping, mix cold butter, sugar, flour, and oats until crumbly. Refrigerate until needed.
  3. For the batter, cream butter, sugar, and lemon zest until light and creamy.
  4. Add eggs one at a time, mixing well after each addition and scraping the bowl.
  5. In a separate bowl, mix flour, baking powder, baking soda, and salt.
  6. Add half of the flour mixture to the creamed mixture, mixing just enough to incorporate.
  7. Add Greek yogurt and mix until mostly combined.
  8. Add the remaining flour mixture, mixing just until barely incorporated.
  9. Gently fold in the chopped peaches.
  10. Pour the batter into the prepared pan and smooth the top.
  11. Sprinkle the streusel topping over the batter and bake for 50-55 minutes until lightly browned.
  12. For the lemon syrup, heat lemon juice and sugar until thickened, about 5 minutes.
  13. Remove the buckle from the oven and pour the warm syrup over it.
  14. Serve warm or at room temperature, optionally with vanilla ice cream.
