One Pot Vegan Orecchiette Pasta with Sausage and Broccoli

Ingredients

The pasta

  • 1 pound orecchiette pasta, dried
  • 1 cup reserved pasta cooking water

The sauce

  • 1 tablespoon extra virgin olive oil
  • 1 small red onion, diced
  • 4 cloves garlic, minced
  • 1 pound plant-based ground beef alternative
  • 2 tablespoons Italian seasoning
  • 1 tablespoon Calabrian chilis
  • 12 ounces fresh broccoli or broccoli rabe spears
  • 1 cup vegetable broth
  • ¼ cup tomato paste

Instructions

  1. Fill a large pot with water and bring it to a boil.
  2. Cook the pasta in boiling water for 10-12 minutes until al dente, then drain, reserving 1 cup of the cooking water.
  3. In a large pot, heat olive oil and sauté onion and garlic for 5 minutes.
  4. Add the plant-based ground beef, Italian seasoning, and Calabrian chilis, cooking for 10 minutes while stirring.
  5. Stir in broccoli, vegetable broth, and tomato paste, adding pasta cooking water to create a moist sauce, and cover for 5 minutes.
  6. Combine the drained pasta with the sauce, adding more cooking water if necessary, and heat for 2 minutes.
  7. Serve immediately.
