One Pot Vegan Orecchiette Pasta with Sausage and Broccoli

Instructions
- Fill a large pot with water and bring it to a boil.
- Cook the pasta in boiling water for 10-12 minutes until al dente, then drain, reserving 1 cup of the cooking water.
- In a large pot, heat olive oil and sauté onion and garlic for 5 minutes.
- Add the plant-based ground beef, Italian seasoning, and Calabrian chilis, cooking for 10 minutes while stirring.
- Stir in broccoli, vegetable broth, and tomato paste, adding pasta cooking water to create a moist sauce, and cover for 5 minutes.
- Combine the drained pasta with the sauce, adding more cooking water if necessary, and heat for 2 minutes.
- Serve immediately.
