Orecchiette Pasta with Sausage and Broccoli

Ingredients

The pasta and sausage

  • 14 oz Italian chicken sausage, casing removed
  • 12 oz uncooked Orecchiette pasta

The vegetables

  • 6 ½ cups fresh broccoli florets
  • 5 cloves garlic, smashed and chopped

The seasoning and oil

  • ¼ cup grated Pecorino Romano or Parmesan cheese
  • 2 tbsp olive oil, divided
  • to taste kosher salt
  • to taste fresh cracked pepper

Instructions

  1. 1. Boil a large pot of salted water.
  2. 2. In a skillet, brown the sausage over medium-high heat for 5 to 7 minutes, breaking it up as it cooks.
  3. 3. Once the water boils, add the pasta and cook according to package instructions for al dente, adding broccoli halfway through.
  4. 4. Reserve about 1 cup of pasta water before draining the pasta and broccoli.
  5. 5. Return the pot to the heat, add olive oil, and sauté the garlic until golden.
  6. 6. Add the drained pasta and sausage back to the pot, mixing well.
  7. 7. Stir in the remaining olive oil, cheese, salt, and pepper, and add reserved pasta water as needed.
  8. 8. Serve in bowls with additional cheese if desired.
