Spicy Orecchiette with Chicken Sausage and Kale

Ingredients

The pasta

  • 8 oz. orecchiette

The sauce

  • 2 Tbsp olive oil
  • 12 oz. chicken sausage
  • 2 Tbsp butter
  • 2 cloves garlic, minced
  • 8 oz. chopped kale
  • ¼ cup grated Parmesan
  • ¼ tsp crushed red pepper
  • 1 pinch salt
  • to taste freshly cracked pepper

Instructions

  1. Cook the orecchiette according to package directions and reserve about ⅓ cup of pasta water before draining.
  2. Slice the chicken sausage into medallions and sauté in olive oil over medium heat until browned.
  3. Add minced garlic and butter to the pot and sauté for one more minute.
  4. Stir in chopped kale and reserved pasta water, cooking until the kale wilts.
  5. Remove from heat and add the cooked orecchiette, allowing to cool slightly.
  6. Stir in grated Parmesan, crushed red pepper, salt, and freshly cracked pepper.
  7. Mix well and serve warm.
