Instructions
- Heat olive oil in a large skillet over medium-high heat and cook the chicken sausage until browned, about 6 to 7 minutes.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add dry orzo and toast in the pan for about 60 seconds.
- Pour in chicken broth to deglaze the pan, then add coconut milk, soy sauce, seasonings, and thyme, mixing well.
- Bring the mixture to a boil, then reduce heat, cover, and let simmer for 10 to 12 minutes, stirring occasionally.
- Once orzo is tender and most liquid is absorbed, stir in spinach and cook until wilted.
- Mix in freshly grated parmesan cheese, taste, and adjust seasoning if necessary.
