Italian Chicken Sausage with Zoodles

Ingredients

  • 2 pieces pre-cooked chicken sausages
  • 2-3 pieces medium or large zucchini
  • 1 ½ teaspoons extra virgin olive oil
  • 1 clove garlic
  • ¼ teaspoon kosher salt
  • teaspoon black pepper
  • 1 cup fresh spinach
  • 6 pieces jarred marinated artichoke hearts
  • 1 tablespoon toasted pine nuts
  • 2 tablespoons reduced fat feta

Instructions

  1. Prepare the chicken sausages in a pan and set aside.
  2. Cut or spiralize the zucchini noodles and set aside.
  3. Heat a large sauté pan to medium heat and add olive oil and garlic, sautéing for 20-30 seconds.
  4. Add the zucchini to the pan and sauté for about 2 minutes, then add the spinach and stir to wilt slightly.
  5. Remove from heat and add the artichokes and sliced sausage.
  6. Divide the mixture onto 2 plates and top each with feta and pine nuts.
