Italian Chicken Sausage with Zoodles

Instructions
- Prepare the chicken sausages in a pan and set aside.
- Cut or spiralize the zucchini noodles and set aside.
- Heat a large sauté pan to medium heat and add olive oil and garlic, sautéing for 20-30 seconds.
- Add the zucchini to the pan and sauté for about 2 minutes, then add the spinach and stir to wilt slightly.
- Remove from heat and add the artichokes and sliced sausage.
- Divide the mixture onto 2 plates and top each with feta and pine nuts.
