Italian Sausage Sheet Pan Dinner

Ingredients

  • 1 16-ounce package Italian chicken sausages, fully cooked
  • 1 small red onion, peeled, halved, and sliced
  • 1 medium zucchini or yellow squash, halved and sliced
  • 1 large handful baby peppers, tops removed and halved
  • 1 large handful baby portobella mushrooms, quartered
  • 4 cloves garlic
  • ¼ cup extra-virgin olive oil
  • 1 tablespoon Italian seasoning
  • ½ teaspoon kosher salt
  • a pinch red pepper flakes (optional)
  • to taste freshly grated Parmesan cheese for serving

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with aluminum foil.
  2. Cut each sausage into 4 pieces and place them on the baking sheet.
  3. Add the sliced onion, zucchini, peppers, and mushrooms to the baking sheet and toss to combine.
  4. In a small bowl, whisk together the Italian seasoning, garlic, olive oil, salt, and red pepper flakes.
  5. Drizzle the seasoning mixture over the vegetables and toss to coat.
  6. Bake for 20 minutes, stirring halfway through.
  7. Sprinkle with freshly grated Parmesan cheese and serve immediately.
