Ingredients

The Sausage and Peppers

  • 1 package pre-cooked Italian sausage (12 oz), cut into ½ thick round pieces
  • 2 count bell peppers, sliced into thin strips
  • 1 count onion, sliced into thin strips
  • 8 oz medium-sized mushrooms (button or cremini)
  • 1 tbsp Italian seasoning
  • 3 tbsp avocado oil
  • 1 tbsp balsamic vinegar
  • 3 cloves garlic, minced (or sub 2 tsp garlic oil)
  • ½ tsp sea salt
  • ½ tsp pepper
  • ¼ cup thinly sliced basil (optional for serving)

The Herb Aioli (optional)

  • ¾ cup avocado oil (or sub olive oil)
  • 1 count egg
  • 1 tsp Italian seasoning
  • 1 tsp minced garlic
  • 6 count fresh basil leaves, roughly chopped
  • ½ tsp mustard
  • ¼ tsp salt
  • Juice of ½ count lemon

Instructions

  1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. Prepare the Italian sausage, bell peppers, and onion, and add them to the sheet pan.
  3. Add the mushrooms to the sheet pan, cutting them into even sizes if needed.
  4. In a small bowl, mix avocado oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper.
  5. Pour the mixture over the sausage and veggies, and toss to coat evenly.
  6. Spread everything out in a single layer on the sheet pan.
  7. Bake in the oven for 20-25 minutes, or until the veggies are cooked to your liking.
  8. While the sausage and peppers are cooking, prepare the herb aioli by blending all sauce ingredients in a container with an immersion blender until emulsified.
  9. Once cooked, remove from the oven and serve with the herb aioli and sliced basil if desired.
