Instructions
- Preheat the oven to 400°F and line a large baking sheet with parchment paper.
- Prepare the Italian sausage, bell peppers, and onion, and add them to the sheet pan.
- Add the mushrooms to the sheet pan, cutting them into even sizes if needed.
- In a small bowl, mix avocado oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper.
- Pour the mixture over the sausage and veggies, and toss to coat evenly.
- Spread everything out in a single layer on the sheet pan.
- Bake in the oven for 20-25 minutes, or until the veggies are cooked to your liking.
- While the sausage and peppers are cooking, prepare the herb aioli by blending all sauce ingredients in a container with an immersion blender until emulsified.
- Once cooked, remove from the oven and serve with the herb aioli and sliced basil if desired.
