Ingredients

The main ingredients

  • 1 lb sweet Italian sausage
  • 2 large green peppers
  • 2 large red or yellow peppers
  • 1 large sweet onion

The seasoning

  • 1 tablespoon olive oil
  • ½ tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Remove the sausage from the refrigerator and let it come to room temperature.
  2. Preheat the oven to 350 degrees F.
  3. Rinse the peppers with cold water, pat dry, and cut them in half to remove the stem and seeds.
  4. Slice the peppers into strips about ½ inch wide.
  5. Remove the outer layer of the onion, cut it in half, and slice it into pencil-width slices.
  6. Place the peppers and onions in a baking dish and coat with olive oil, then add the seasoning and toss to combine.
  7. Place the sausage links on top of the pepper and onion mixture.
  8. Bake in the preheated oven for 45 minutes, then stir the mixture and roll over the sausage.
  9. Cover with aluminum foil and return to the oven for an additional 15 minutes.
  10. Remove from the oven and use a slotted spoon or tongs to serve the sausage, peppers, and onions.
