Sausage and Peppers

Ingredients

  • 1 Tablespoon Olive or Canola Oil
  • 2-3 Tablespoons butter
  • 1-1½ pounds sweet or hot Italian sausage
  • 2-3 teaspoons minced garlic
  • 1 large onion, sliced into ¼-inch strips
  • 2 bell peppers (green, red and/or yellow), sliced into ¼-inch strips
  • 1 teaspoon freshly ground white pepper
  • 1-2 teaspoons creole cajun seasoning
  • ½ teaspoon fresh thyme
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1 can (15-ounce) diced tomatoes
  • to taste Salt

Instructions

  1. Heat oil in a large skillet over medium heat until hot.
  2. Brown the sausages on both sides for about 3-4 minutes, then remove from the pan.
  3. Add butter to the pan and let it melt, then add onions and garlic, stirring for a minute or two.
  4. Add the bell peppers, thyme, and cajun seasoning, and cook for about 3 more minutes.
  5. Stir in the diced tomatoes and tomato paste, scraping the bottom of the pan to release browned bits.
  6. Bring the mixture to a boil, then reduce to a simmer.
  7. Cut the sausages into desired pieces and add them back to the skillet with the broth.
  8. Cook for about 15 minutes, adjusting thickness and taste with more broth, water, seasonings, and salt as needed.
  9. Serve warm with breakfast potatoes or rolls.
