Sausage and Peppers

(green, red and/or yellow), sliced into ¼-inch strips

Instructions
- Heat oil in a large skillet over medium heat until hot.
- Brown the sausages on both sides for about 3-4 minutes, then remove from the pan.
- Add butter to the pan and let it melt, then add onions and garlic, stirring for a minute or two.
- Add the bell peppers, thyme, and cajun seasoning, and cook for about 3 more minutes.
- Stir in the diced tomatoes and tomato paste, scraping the bottom of the pan to release browned bits.
- Bring the mixture to a boil, then reduce to a simmer.
- Cut the sausages into desired pieces and add them back to the skillet with the broth.
- Cook for about 15 minutes, adjusting thickness and taste with more broth, water, seasonings, and salt as needed.
- Serve warm with breakfast potatoes or rolls.
