Ingredients

The pasta

  • 1 package penne pasta

The sausage

  • 1-1½ pounds Italian sausage

The sauce

  • 2-3 tablespoons olive oil or butter
  • 1 large onion
  • 1 teaspoon fresh thyme
  • 1 teaspoon Creole Cajun seasoning
  • 1 teaspoon Italian seasoning
  • 1 teaspoon chili pepper flakes
  • 2-3 teaspoons minced garlic
  • 2 tablespoons tomato paste
  • 4-5 medium Roma tomatoes
  • 2 medium bell peppers
  • 1 cup chicken broth

Garnish

  • to taste fresh basil leaves

Instructions

  1. Cook the pasta in boiling water until al dente, then drain and reserve some pasta water.
  2. Heat olive oil in a skillet and brown the sausage on both sides.
  3. Add reserved pasta water to the skillet to prevent burning and cook the sausage until almost done.
  4. Slice the sausage into bite-sized pieces and set aside.
  5. In the same skillet, add butter, onions, thyme, Cajun seasoning, Italian seasoning, and chili flakes. Sauté for a few minutes.
  6. Add garlic and tomato paste, cooking for a few more minutes.
  7. Stir in diced tomatoes and cook until softened, adding water if necessary.
  8. Return the sausage to the skillet with bell peppers and add chicken broth. Cook until the sausage is fully cooked and the sauce thickens.
  9. Mix in the cooked pasta, ensuring it's well coated with sauce. Adjust seasonings as needed.
  10. Garnish with fresh basil and serve immediately.
