Sausage and Pepper Pasta

Ingredients

  • 1 package Johnsonville Italian Sausage Links
  • 12 ounces rigatoni pasta
  • 2 tablespoons butter
  • 2 cups sliced bell peppers
  • ½ cup onion
  • 1 teaspoon garlic
  • 16 ounces tomato sauce
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • ¼ cup grated parmesan cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Cook the sausages according to grill directions.
  2. Slice the cooked sausages.
  3. Boil the pasta in salted water as per package instructions.
  4. Melt one tablespoon of butter in a large pan over medium-high heat and add the peppers, seasoning with salt and pepper.
  5. Cook the peppers for 5-6 minutes until softened and lightly browned, then remove them from the pan.
  6. Add the remaining butter and diced onion to the pan, seasoning with salt and pepper, and cook for 5-6 minutes until softened.
  7. Add minced garlic and cook for 30 seconds.
  8. Stir in the tomato sauce and Italian seasoning, bringing it to a simmer.
  9. Drain the pasta and toss it with the tomato sauce.
  10. Top the pasta with sliced sausage and peppers, then sprinkle with parmesan and parsley before serving.
